InterContinental Bali Resort Celebrates Indonesian Gastronomy with William Wongso

There’s something special about food that tells a story. In Indonesia, that story can travel from one island to another, shaped by indigenous ingredients, age-old techniques and generations of culinary knowledge. At InterContinental Bali Resort, that story took center stage this August as the resort welcomed one of Indonesia’s most respected culinary authorities, William Wongso, for a seven-day culinary residency.

Held from August 18 to 24, 2026, the residency brought Wongso together with Executive Chef Indrajit Saha and the resort’s culinary team for an immersive exchange centered around Indonesian heritage and craftsmanship. Rather than simply creating a special menu, the collaboration focused on something more lasting: strengthening the team’s understanding of Indonesian gastronomy through hands-on mentoring, recipe refinement, indigenous ingredients and traditional cooking techniques.

Keeping tradition at the heart

With decades spent documenting, preserving and championing Indonesian cuisine, Wongso brings a deep understanding of the country’s regional flavors and culinary traditions. His philosophy is refreshingly simple: refinement should never come at the expense of identity.

“Indonesia has an extraordinary culinary heritage, with every region offering its own identity, ingredients and traditions,” Wongso shared during the residency. For him, the opportunity at InterContinental Bali Resort was about developing what the culinary team had already created while ensuring that the essence, flavor and story of Indonesian cuisine remained intact.

That philosophy shaped the work throughout the week, as the team explored everything from ingredient provenance and preparation to traditional techniques and the delicate balance of flavors. Existing recipes were reviewed and refined with greater precision, while maintaining the character and authenticity of their origins.

A taste of Indonesia, with a sense of place

Set along Jimbaran Bay, InterContinental Bali Resort is an apt setting for a culinary journey that celebrates the archipelago. Here, Indonesian gastronomy becomes more than a dining experience—it becomes a way of connecting guests with the culture, ingredients and stories behind the food.

For the resort, the residency was also designed to have a life beyond its seven days. The knowledge and refined recipes developed during the collaboration will continue to influence selected Indonesian culinary offerings across the resort’s dining venues, giving guests the opportunity to experience familiar flavors through a more considered and elevated expression.

It’s an approach that feels particularly relevant in a destination like Bali, where food is deeply intertwined with place, people and tradition. By investing in its culinary team and giving heritage the attention it deserves, the resort is creating a dining experience that goes beyond what is on the plate.

More than a culinary collaboration

Ultimately, the residency was about passing knowledge forward. From traditional techniques to the stories behind regional dishes, the exchange between Wongso and the culinary team created an opportunity to look more closely at what makes Indonesian food distinctive.

The result is not about reinventing Indonesian cuisine for the sake of it. Instead, it is about understanding its foundations, respecting where each dish comes from and finding thoughtful ways to present those flavors to today’s diners.

Rooted in tradition and guided by craftsmanship, InterContinental Bali Resort’s collaboration with William Wongso is a reminder that some of the most meaningful culinary experiences begin with looking back—before finding a new way to bring those stories to the table.
