SugarSand Unveils a Borderless New Menu Inspired by Bali, Sustainability, and Global Flavours

Launching on 26 June 2026, SugarSand's reimagined borderless menu marks a fresh culinary direction under the leadership of newly appointed Chef de Cuisine Made Sutarga, affectionately known as Chef Ega. The new offering blends seasonal Indonesian produce with global cooking techniques, creating a dining experience that feels both adventurous and grounded in place.

While longtime favourites inspired by Japanese izakaya culture remain part of the experience, the refreshed menu introduces a broader perspective—one that celebrates local ingredients while drawing inspiration from culinary traditions around the world.
For Chef Ega, the approach is rooted in craftsmanship and respect for nature. Drawing on nearly two decades of experience across Singapore, Australia, and the United States, he brings a passion for preservation techniques including fermentation, pickling, and house-made garum. These methods not only enhance flavour but also support a more thoughtful and sustainable use of ingredients.

The result is a collection of dishes designed to surprise and comfort in equal measure. Highlights include Raw Fish elevated with house-made garum, Lamb Gnocchi paired with handmade pasta and pumpkin gremolata, and Bone Marrow served with brioche. Seafood lovers can explore the Sri Lankan Grilled Fish Curry and Squid Ink Fettuccine, while the intriguing Open Onsen's Raviolo adds another layer of creativity to the menu.

Dessert is equally memorable. The Negara Chocolate concludes the experience with a playful exploration of texture, featuring innovative aero and nitro chocolate elements that transform a familiar ingredient into something entirely unexpected.
Despite its global influences, the menu remains closely connected to Bali.
