Chef Ashwani Mall joins the resort as its new Indian Chef, bringing with him not just technique, but decades of lived experience shaped by tradition, travel, and an unwavering respect for authenticity.

Born and raised in New Delhi, Chef Ashwani’s relationship with food began long before hotel kitchens and white jackets. His early career took shape in some of India’s most respected dining rooms, including Varq at the iconic Taj Mahal Hotel and Fire at The Park Hotel, where classical Indian flavors were treated with precision and reverence. These formative years instilled a strong foundation – one that values balance, spice, and the quiet complexity that defines Indian cuisine at its best.

With more than 25 years in five-star hospitality, Chef Ashwani’s journey has been closely intertwined with Marriott International. He officially joined the group in 2016 at The Westin Pune, leading Kagan Indian Restaurant as Chef de Cuisine. There, he refined not only his culinary craft but also his approach to leadership – an ethos rooted in calm confidence and collaboration. His move to Indonesia in 2019 marked a new chapter, as he brought Indian flavors to Jakarta through Handi Indian Restaurant at Le Méridien, elevating the city’s Indian dining scene until 2024.

Bali soon followed. Over the past year, Chef Ashwani has contributed his expertise across several Marriott properties on the island, including Elements by Westin, Renaissance Bali Uluwatu, Four Points by Sheraton Bali, and Sthala Ubud. Each destination added a new layer to his understanding of how Indian cuisine can adapt to different settings while remaining true to its soul.

At Renaissance Bali Nusa Dua Resort, his focus is clear: thoughtful, authentic Indian cuisine presented with contemporary finesse. From intimate celebrations to large-scale weddings and MICE events, Chef Ashwani is known for creating menus that feel personal yet refined – food that connects people, cultures, and moments around the table.

Away from the kitchen, he carries the same gentle curiosity into life, finding joy in films, music, and discovering new places. It’s this balance – between discipline and ease, tradition and openness – that defines his approach to cooking.
