This August, The Ritz-Carlton, Bali invites discerning diners to embark on a rare culinary journey where tradition meets artistry. Over two evenings, 23 and 24 August 2025, the resort’s signature Indonesian restaurant, Bejana, will host an exclusive collaboration between celebrated culinary ambassador Chef Petty Elliott and The Ritz-Carlton, Bali’s Director of Culinary, Chef Raymond Siek.

United by a shared passion for honoring Indonesian flavors, the two chefs will present a dining experience that unfolds in two distinctive chapters.
On the first evening, guests will gather for a vibrant Nusantara buffet dinner, a culinary map of the Indonesian archipelago. From the rich, spiced dishes of Sumatra to the fresh, aromatic flavors of Eastern Indonesia, each station tells a story of place and tradition. The evening will be alive with the sounds of rindik and the graceful movements of Balinese dance, performed by the local community, bringing warmth and depth to the celebration.

The following night, the atmosphere turns to intimate refinement with an eight-course set dinner. Crafted in harmony by Chef Petty Elliott and Chef Raymond Siek, each plate will balance heritage and innovation – a meeting of textures, colors, and flavors that speak both of memory and of modern expression.

Adding a personal touch, Chef Petty Elliott will also host a book signing for The Indonesian Table, offering guests the chance to connect with her culinary vision and bring home a signed copy.
