Leading Masonry’s kitchen is Group Head Chef Simon Polkinghorne, whose more than two decades of experience across Melbourne’s respected kitchens inform the restaurant’s approach. Rooted in fine dining and classic technique, his cooking at Masonry takes a refined yet relaxed direction, combining local and imported produce with thoughtful, from-scratch preparation.
